I actually sprac the plates with non-stick spray, load the first Quesadilla on the plate, add incredients and then use my top Quesadilla (12") to lay on top, compress ingredients down and then close and latch the lid. Watery ingredients will make a mess - strain them. Don't go crazy on the cheese and you won't have "queso ooz!" Have fun and enjoy. I use a pizza cutter on glass board to cut pieces cleanly.
