Review: Good with pork - I use this to make Gandule Rice. It comes out wonderful. Recipe: 2 cups washed rice, half block of (slurried) achiote paste. Chopped veggies (corn, carrots, onions). 1/2 lb of saute pork. Gandule beans, kidney beans. Pressure cook on high for 45 minutes. Jumanji!

**Q: Is this the same thing as “ Tex Mex Paste” ?**
A: I'm not sure what "TexMex" paste is.  Achitote paste is made from the annatto seed and I use it to flavor and color food.  I use it in dishes like taco birria, al pastor, etc.  The flavor is very, very mild however the color it adds is magnifico!

**Q: Is this supposed to be dry powder? Mine was like play dough.**
A: It is described as a "paste", not a powder. Use a knife to break up the paste in smaller pieces. I discovered that it works best when you use a marinade that has a high "acidity" content like Italian dressing or orange juice. Liquids with high acidity content will help break down the pieces of paste. Don't be afraid to get your hands messy as you massage the chicken, ribs, shoulders, etc. with the marinade before cooking on the grill or smoker.

**Q: Do you refrigerate?**
A: We do not refrigerate it.

**Q: Gluten free?**
A: Google says yes. But you might want a second opinion.

### ⭐⭐⭐⭐⭐ You need this to make Belizean Stew Chicken

The most important ingredient when making Belizean stew chicken and rice and beans! (along with Marie Sharp's Habanero Pepper sauce, from Belize!) We call this the "Chicken crayon". The idea is to colour the raw chicken pieces with this spice (just cut off a little chunk so you don't contaminate the bar) and let it rest for a little while, then pre-fry it a little before throwing it in a pot with Badia Complete Seasoning, onions, green peppers, and chopped up tomatoes. Let it all stew in a big pot for a couple of hours and you'll have the best chicken you've ever tasted. Of course, in Belize, you'll get a homemade version of this, but this is a wonderful replacement that's available online.
