In any case, whatever the process, this stuff is so much better than others I've bought in the stores (including Sprouts) that I won't buy anything else. It's either real lemon or Sicilia for me. I should add that I've seen many sellers of this product on the site, and I can't believe the high price often charged for this lemon juice.
