Produced between the second half of June and the first half of July, this honey is collect from Siracusa, Italy. Called Timo in Italian, thyme blossoms produce the best honey on earth, according to the ancient Greeks. Colored in varying shades of amber and beige, or hazelnut if crystallized, it offers an intense aroma of magnolia, aromatic herbs and graphite. It tastes sweet and persistent, fresh and reminiscent of tropical fruits, dates and white pepper.Mieli Thun's small, family run company is renowned for its many types of single variety Italian honeys, obtained through knowing and directed nomadic beekeeping. Their ambition is to help lead a renaissance in artisanal honey-making: the quintessence of the art of gathering honey.No honey should be fed to infants 12 months or younger.
