One of the best researched and written cookbooks of the Western fur trade. Sections on Saint Louis, Santa Fe, Taos, Bent's Fort, and food on the trails between these points. What were the few pleasures that the traders, trappers, Native Americans, and Hispanic's enjoying at this time and how to cook the same today in your own kitchen. It is also the cookbook of the original owner and chef of the restaurant The  Fort west of Denver.
