It's just a salt taken from plants. A little glutamate. MSG can really take you your cooking game to the next level. And the so-called side effects are the SAME that a person would experience if they ingest more salt than THEY should. Which makes sense...because its a salt. Anyway, this particular brand is ground to a favorable consistency. Fresh and no clumping. I notice the flavor enhancements starkly when I use it in my egg drop soup, chicken and dumplings or veggies. I've tried it on a few steaks and pork ribs a couple of times and can't really say I observed a noticeable improvement to the flavor.
