Can I chop up my vegetables on this mat quietly?

I don't have this mat. Never ordered a bar mat. But from looking at it, I would say that it is a drying mat...not a cutting board

Will these stain granite?

I don't know about granite, but these did not stain the unfinished wood inside my cabinets nor did they stain my walnut shelves coated with oil based polyurethane. If you don't get a clear answer you could always put something in between the mats and countertop (e.g. wooden/plastic cutting board) just to be safe.
