I honestly do not know and it's not mentioned on the Date Lady website. However, my impression is that it is not cooked. You must store it airtight in the fridge after opening. My reasons for thinking it is raw are the consistency of the paste, the taste of the paste, and storing in the fridge.

Hi there! We would suggest using our pure date syrup or coconut date sauce for sweetening beverages. These two blend wonderfully into liquids!
