Somone posted that the circles on the pastry mat are not in inches. im confused. can you confirm 100% that the circles on the pastry mat are inches?

If you take a circle that's 10 inches across, and center it on top of an 11-inch circle, the edges of the circles will be half an inch apart from each other. That's why the concentric rings on the mat appear not to be in increments of one inch, even though they are definitely in inches. Two edges of the mat are also ruled in inches, and the opposite two edges are centimeters.

When you roll this up to store it does it lay flat again once unrolled? I dont want one that will curl around the edges and not lay flat again.

Yes. It lay flat again once unrolled. Actually I have to use a rubber band to keep it rolled, otherwise it won't stay rolled, just lay flat.

Does this fit a commercuial full sheet pan? Is there any trimming that needs to be done.

Don’t ever trim these silicone sheets as there is fiberglass in them. The result would be extremely damaging to your hands and food product.

I have this mat...It's an excellent pastry mat...The thickness is fine as it rolls up without any wrinkles...You will be very satisfied with it...I had mine for about six months and being used on a daily basis with bread dough using olive oil instead of flour is perfect...Nothing sticks...Rock
