Works on Oneida 31161 Digital Thermometer
Been looking for a replacement probe for about two years now could never find one to give accurate temperature either off by 100° or cable connection, too short or too long, after plug in it immediately went to the temperature in the house, tested it in hot water then the cold water give the same temperature up or down 1° as the other thermometers as we all know, these kitchen thermometers not very accurate and that is good enough for barbecuing or roasting a turkey

Perfect replacement.
This is the second of these I've bought. The oven door is hard on the cable and eventually you get a tear that only gets worse. It's a perfect replacement for the original probe. The temperature is accurate and reads fast. If I have a complaint it's that the cable could use a braided stainless jacket to help avoid the tears in the vinyl cover in the first place.

Worked great to check temp
Needed to check temp of roast in oven . Worked perfectly! I did not have to keep opening the oven door and losing heat!

Good replacement BUT ...
Fits and works as a replacement probe for my Polder digital cooking thermometer. BUT, the probe does have a plastic piece that will melt (but no completely) when used in the broiler. The plastic "grip" shows signs of melting but it's still usable and is in one piece. Not a big problem. However, when I received the probe, there were no instructions or warning to its vulnerability to high temps. Haven't tried it in the oven at, say, 400 degrees, but hopefully no further melting will occur.

Can replace Taylor probe - but you have to do math!
I bought this probe to use with a Taylor oven temperature probe (the Taylor probe quit working due to abuse). It is not sold for the Taylor models, and I wasn't sure that it would work, but a probe is cheaper that the whole device, so I figured it was worth a try. Results: It works well, but you have to add 68° to the reading to get the correct temperature. I calibrated it against an instant-read thermometer in water from freezing to boiling, and there is a simple linear relationship. At temperatures below 120 (real temp) the display reads "Lo", but then is accurate (with the formula) up to at least 212° F (boiling water reads as 144° on the display). I have used it for several months now, testing it against an instant-read when the food is ready (every thing from tenderloin (display 62 = real 130), to turkey (display 112 = real 180), to bread (display 137 = real 205)), and the formula holds up. The probe itself has a nice length, and the wire attachment to the plug and and the thermometer end is strong. The handle on the probe is nicely designed and easy to use, even when inserting it into food in a hot oven. I keep a little table of readings next to the oven, so I don't have to think too hard while cooking, and I put a sticker on the display to remind me (or any visitors who use my kitchen). If you don't mind that inconvenience, it is a great replacement probe for the Taylor. I assume it works well with the correct (Polder) unit, too, without requiring the math.

Saved Us Money!
Perfect match to replace the cord that had broken on our oven thermometer. Way cheaper and less wasteful than having to replace the whole thing.

Perfect replacement probe for Polder meat thermometer
I have had my Polder meat thermometer for over ten years now, and have had to replace the probe with this new model. I see that they have solved a design problem by adding a rigid plastic connection between the wire and the metal probe. The old probe just had the wire crimped into the end of the metal probe and from the get-go that looked like a weak link in the product to me. Eventually after may removals from a Boston butt using a thick mitt, I must have finally broken the wire loose at that joint and the thermometer didn't work right. The price of the new probe approaches 2/3 the cost of a whole new thermometer, but I liked my old thermometer and ordered this replacement. I plugged it in and turned it on in my home office where I have a digital thermometer. After about a minute of acclimation, both thermometers read the same. I am pleased with this replacement and think it will last a long time since they have changed the design.

Polder finally got it right - Great improved design for the temperature probe
I've gone through several Polder probes in the past two years. They always failed due to the very poor construction of the wire connection into the metal probe. This was a weak point that always shorted out after a few uses rendering the Polder thermometer useless. It's unavoidable that there will be some twisting and flexing of the wire and probe when placing a roast or turkey into the oven. I always had a spare on hand anticipating failures during Thanksgiving or a holiday. The new design is a vast improvement. The silicone support not only provides an insulated place to remove the probe when hot, but firmly supports the wire connection into the probe. 10 times into the oven and works like brand new. Out of habit I ordered two probes. With the improved design each one should last for quite a while. Never hurts to have a spare on hand. Polder finally got got it right.
