These are ingredients for Molecular Gastronomy! Gave them as a gift and the recipient was delighted! Never before have I heard someone shriek with delight at having received a gift of sodium citrate! Who knew!!! So glad to be able to find these.

I tried spherification for the first time with this bundle, and it was a pretty good one. I would not have minded a half-page sheet of instructions, but it's not hard to look up. Four stars because the bundle should really be calcium LACTATE (available from the same company), not calcium chloride. Calcium chloride tastes nasty, which matters if you try "reverse spherification". I recommend getting calcium lactate and sodium alginate separately, instead.

The calcium chloride is super bitter, I'm going to try calcium lactate myself, I hope that comes out better.

It was thick/solid all the way through and had no taste. We tried making it taste better, but could not so far.
