Are these grips suitable for sqaush raquets?

Yes - I use these for my squash rackets. As I like a small grip I use 2 of these rather than another type of grip.

These specify one size or 10 pack, how long is one size? Is it a giant one you can cut to your own length or is it just one standard length grip?

These are 10x individual lengths which are long enough for a tennis racket grip, with still some to spare. I believe they are long enough for a cricket bat. These are excellent grips, probably the best you can get, but they rip easily and don't last long
