Can i plug the audio jack into my monitor and the usb into my xbox and for it to work?

Perfectly fine, the usb is only to power it on, but the 3.5mm jack takes audio from the device it's connected to.

Can you run these off mains?

The Creative Pebble can be powered connecting them straight to a USB powered port of your PC or by plugging the USB cable to a smartphone/tablet charger.
