Jacques Torres Chocolate 60% Dark Chocolate Baking Discs - 2 Pounds

Just wow! I anticipated being satisfied with this purchase, but satisfaction hardly begins to describe it. This is one of the finest 60% chocolates that I have ever tried, and I have tried a boatload of chocolates from all over the globe over many years. When I opened the bag, I could immediately detect a wonderful chocolate aroma, and no camouflage by any imposter like vanilla. Like a fine coffee roast, you can smell the level of roast of the cocoa, and this was assertive but not in your face burned. It was like the difference between a lovely Viennese roasted coffee compared with an overdone dark and oily French roast. The sheen on each feve/disc told me that no shortcuts were taken in the tempering. The first bite was also telling— not a hint of “waxiness”. Your teeth just sink into the chocolate and it immediately begins to melt and give you a warm, immersive chocolate experience. The aftertaste is just as delicious as the up front taste. No bitter or burnt notes at the finish. I was going to use these feves in two recipes that I have in mind. I think however, that I will need to conduct some more extensive “testing” of this product before I do that! I will get a 2nd bag for the baking, and the missus and I will continue testing this bag.

Awesome flavor but expensive.

hands down the best chocolate for date bark, using in baking, eating straight out of the bag. ordered at least 4 bags in the past year.

Came during a hot summer day. Inside the package were multiple ice packs. Product was still cold. Chocolate melts wonderfully. Tastes absolutely fantastic. I plan on buying again once I run out.

I expected a lot of Jacques Torres product, he absolutely delivers. He is the chocolate Godfather. This chocolate is so smooth, super product. When I make gigantic chocolate chip cookies, this is a luxury I add to make them over the top.

The bummer was over 25% were melted, so fine for snacking but not baking

The down side is the cost of the shipping but it's totally worth it. On my second order I got two bags which made it more palatable, if you'll pardon the pun. We made Dubai chocolate and everybody really loved it. When melted the chocolate stays liquid for quite a while making it easier to work with too. The taste is deep, dark and pure. No weird overtones, just chocolate. I highly recommend this if you like dark chocolate.
