This is one of those knives you are going to keep coming back to in your kitchen. It sliced beautifully it holds an edge well, when the edge needs a touch up it’s only a few touches to the hone steel to bring it back to a razor. It’s going to get patina and I love it. The different citrus each add their own coloring and charm. Rinse after use a touch of olive oil and that patina sets up to look more like art each time.
