The business!
This stuff is brilliant. Works well on chicken and particularly nice with fish. Gives a spicy (hot but not too hot) flavour and blackens the meat/fish excellently. Paint the meat or fish with melted butter rub in the blackening and the drop into a very hot dry frying pan. Cook both sides until blackened and add a little more butter if need be and there you have it. Reminds me of the blackened fish I had in Barbados.
