Q: How would you match up a stainless steel well for this?

It’s 1/2” NPT and the stem is 2.5” long. Depending on how much room you have available, there is a S/S well on Amazon that matches up that’s 4.5” overall… “Taisher Thermowell” Good luck!!

No, it is not possible to take the stem off.

Q: If I were to mount this in the side of a steel kettle, would the 'Every Angle' part be inside or outside the kettle?

The every angle part should be installed outside the kettle. Only the bulb(wetted part) below the 1/2"NPT thread should be installed inside the kettle.

Q: Any reason not to strap this thermometer to a hot water copper pipe near an elbow to measure water temp?

Why not put a T in place of the elbow and let it actually read the real water temp?
