Q: How do they hold up to heat? I'm looking for something for a smoker, so there would by smoldering wood in them.

I use these cans to create patio torches - it sits in a gallon paint can and I place a toilet roll in the quart can, then pour in a 16oz bottle of isopropyl alcohol. The toilet roll acts as a source/wick and the flame burns evenly. I use the lid to control the air flow. Now I haven't had any problem with flame in the can - but I would still strongly recommend caution. I have no experience with smokers and I don't know what temperatures we are talking.

Q: Can these be used as knock down cans

Yes I think they would work fine. On another note, I filled one with paint and tapped the lid on with a hammer like I usually do and the can buckled. These are made out of thinner metal that most paint cans I have come across. I don't think I would purchase them again.

Q: Are these paint cans lined (appropriate for water-based paints without rusting)?

Tin-plated steel. They are not lined.

Q: Can these be used to hold food ie. Melted Chocolate ?

Hello, the official answer is these aren't FDA approved for food contact. Often paint cans may be treated with an anti-skinning coating on their lids, etc. so I would not recommend for food use. They are fine for wrapped / packaged food. Now, if you choose to thoroughly wash and sterilize them, it is up to you. The material itself is food safe.
