The CasaWare 8" All Purpose knife is designed to be one of your favorite kitchen tools. This versatile knife can be used as a Chef Knife,a Santoku slicer, a Cleaver for chopping and a Mezzaluna for chopping and mincing. The Full-Tang Japanese Stainless Steel blade's forged construction gives you superior durability and maximum performance. The patented groove technology creates a natural non-stick that pushes the food away from the blade and prevents the food from sticking. The ergonomic handle is designed to fit comfortably in your hand and can be used for both right and left handed chefs. The knife has a 15 degree angle on each side of the blade. The Rockwell/Hardness is RC 53. The blade can be sharpened in a traditional knife sharpener that would be sold in most specialty/department stores.
