Q: Where can we buy a new cooking pot for our 8 cup one? It still works fine but the interior non stick is failing.

Same problem, bought new, but the non -stick never worked. Burned rice sticks to the bottom.

Q: is the cooking pot stainless

It’s more like aluminum with a light coating. Nothing sticks whether it be veggies or rice. Cleaning is so easy it’s ridiculous

Q: can I cook only 1 cup of uncooked rice in this?

Yes I do that all the time - 1 cup with a baking measuring cup. Seems like that's the amount that works best without any liquid boiling over. I think the 4 cups is based off of the different rice measuring cups because I do not think you could possibly fit 8 baking measuring cups of cooked rice in this.
