Fresh, tasty, Jovial Substitute
from the pictures:1) Shenandoah whole wheat einkorn boule. wheat, water, salt2) bread baked up pretty light for a second loaf. very tasty imo.3) Jovial einkorn stater fed with Shenandoah4) Jovial einkorn stater fed with Jovialfor about 2 months i waited for jovial whole wheat einkorn to become available. it's been out since quarantine. (they have most other products including einkorn berries). but finally i ordered this stuff from Shenandoah. i wondered if the yeast in my Jovial starter would transition to this new flour. it definitely did. as you can see the Shenandoah developed faster than the Jovial. i did the exact same time, mixture....everything except the floor. However, i think the Shenandoah has more moisture content giving it an advantage. I have noticed that starters with more moisture develop faster.Shenandoah smells great. it's not powdery. more moisture. and perhaps becasue it's stone ground it has more visible bran. i am on bread loaf #2 and it's already very nice. wonder what loaf 4, 5, 6 will be like? Note: i have been following the recipes from Jovial (since that's where i got my start with einkorn) but i think i need to slightly modify for Shenandoah. again, the moisture. the bread is great but the dough can be super sticky and hard to work with. will reduce added water in next loaf.my wife and child have wheat sensitivities. no complains so far. it's great to make a super healthy bread that actually tastes good!this was a test bag of 5lbs. will now be ordering the 10lbs.

Great product for sourdough starter!!!
I got a sourdough starter going and ready to bake with using this flour in about 40 days, it is actually more efficient than all purpose flour cuz you use half the flour. Kept in the freezer, it stays as fresh as the day I received it.

Arrived 2 days after being shipped; looks healthy and fresh
I haven't used the product yet but I have used Einkorn flour for over 2 years and love it! This flour looks coarser ground than the prepackaged Einkorn flour I have used in the past; I think I will like it. If I need it to be finer for a recipe I will just put some in my food processor.I like that they sent instructions on how to incorporate this flour into your recipes. It is easy to work with and so much better for you than the flour sold on the shelves in the grocery stores. I am sensitive to flour and I have no trouble when using Einkorn flour and the pasta made from it. I have heard that the fresher the flour the more nutritious the flour is so I thought I would give this a try even though it is twice as expensive as the prepackaged flour. I placed my order for 50 lbs on a Friday, it was ground and shipped out on a Monday and I received it that Wednesday. I am very happy how fresh it still was when I received it. I measured it into 2 lb bags and used my Food Saver to seal it and put it in the freezer.

Love this product for pizza crust. There is a little bit of a learning curve to using it, but it so much better than regular flour!
