There are a good basic instructions here, which is the point. I haven't followed any of the recipes yet, however there are only a handful of them. As a time/temp reference this is a good book.

Great book for beginner Sous Vide cook, nice big pictures and step by step instructions on few recipes. Love it.

A practical usable guide.
I am new to Sous Vide, and needed a book to accompany my new circulator. When I compared the times and temperatures of the manufacturers suggestions and this book, I found this book to have figures more to my taste. The recommended times and temperatures for eggs, as an example, gave me perfect poached eggs. The manufacturers suggestions came out runny. STill good, but using the book gave better results. There is a chapter on safety, which is very important. There are basic recipes and lots of suggestions. Would recommend this book to anyone wishing to learn more about sous vide cooking.

Fabulous sous vide guide!
This is a beautifully put together guide to cooking sous vide. The photography makes everything look scrumptious, and I can't wait to start cooking with it.Single page guides to everything from, the perfect egg to different proteins to vegetables are a great overview for when you've finished the delicious receipes, which are presented with a timeline of how to get the recipes on the table on the schedule you want to serve them.Also helpful, the information on food safety, food storage, and the information on the safety of using plastics make this a must have addition to any sous vide cook.Great job!

Highly disappointed. I am a cookbook collector and I will ...
Recipes are more for accompaniments for the food and less for the actual protein that you are sous viding. Found inconsistencies in the recipes and directions were not straightforward. The charts with cooking times were helpful but that is about it. I was hoping for more recipes with spices/marinades to cook the proteins in, instead I found recipes for risotto and pastas...Not very creative on the recipe front. Highly disappointed. I am a cookbook collector and I will not be keeping this for my collection.

Clear and concise charting
This book has easy as well as gourmet recipes, but each meat catagory has a clear, understandable chart for cooking preferences such as Rare,medium and well done.

More an Ad than a Cookbook

Heavy on the guide element; very light on the recipe side.
I have to say I was disappointed with this book, having purchased it to give me some recipe ideas for my new Sous Vide.Firstly - It is heavy on the guide element. So if you are looking for a recipe book, then this really isn't going to tick that box for you. Yes - there are recipes - but they are very basic as the emphasis is placed on how to cook the different cuts of meat, vegetables etc.Secondly - It is well written, with decent images, but I'd say that with so much information available on the internet on the basics of cooking Sous Vide, I couldn't really recommend the purchase of this book as it doesn't bring anything new tot he table.I can see this being useful to someone who just wants a reference book handy, but I don't see it being anything more than that.

Best sous-vide book, period.
I have several sous-vide guides and cookbooks and I like them all, but this one is, in the words of Tina Turner, "Simply the Best". The book is, in part, a product guide to a model of sous-vide controller that you probably do not own, but don't be put off buying it as the advice given in the book is priceless.The explanation of the sous-vide process is clarity itself. There are charts for each type of food e.g. seafood, pork, beef etc. and these are so well set out and informative I can't think of a way to improve them.I have tried a few of the recipes and they have all been outstanding: try the pulled pork and you will never cook it another way again.

Reasonable recipes but not a reliable guide to safe Sous Vide
Over rated and not particularly accurate on matters such as safety of Sous Vide. Also information is rather superficial. Some recipes are quite good but forget the Codlo device and get a Sous vide cooker that circulates the water.

This book is only an advert for CODLA
Very disappointed with this book which was not cheap and was really only an advert for CODLA. A very small amount of information and even less recipes

Great book for people new to sous vide cooking
We're new to sous vide cooking and this book has been very helpful. The recipes are very easy to follow and you can build on top of them to come up with more elaborate plates. The winner for us so far is salmon. Aboslutely delicious.
