Is this the one that comes with exchangeable cables?

I think that's the non-headset models. I remember my old HD-558's you could twist the cord from the headphone.

Does it come with exchangeable cables like for use with smartphone or PS4 ?

Mine came with 2 cables. I currently have one plugged directly into my Xbox One Controller, and it works great for sound when playing single-player. I would need to buy a separate Adapter if I wanted to use the Microphone, which I might do later.
