Q: Can pies be removed easily from the pan to be put on a nice tray or does the pie have to eaten out of the pan?

Depends on the crust and if you prep the pan. We do not need to prep the pan. We use a pot pie crust by Pillsbury and they slide right out

Q: What is the capacity?

I'm not sure when you say capacity what you are looking for. I can tell you I made mini apple pies and they fit beautifully. I felt it was a pie for one but every one I gave them to felt it was a pie for two. I hope that helps. They are definitely worth the money.
