Is the grinding mechanism ceramic?

It appears to be brass as well. I just received mine last month, and they’re a bit tough to crank.

Are you able to tighten the top screw?

You mean the one in the middle? There are two pieces that could be adjusted : the screw onthe bottom, to regulate the grind, and the one in the middle, to disassemble the apparatus in order to clean it.

Would these work as salt and paper grinders? I’m looking for larger ones so I won’t have to refill constantly

Yes they would. You would have to use them with the inferior compartment removed. I leave them on until I fill them with the already grinded coffee. In your case, you could use them like that, and fill the compartments with salt/pepper, or without the inferior compartment, and grind the pepper over the food.

Where is the handle for the taller one? I just purchased these and though I found the handle for the smaller one I cannot find the handle for the larg

When I received mine, they were attached to the grinder. The only thing I miss is some sort of bolt to hold the handle on, this is on both. They work well but the handle does come off easily.
