Few drills go fast enough to get much benefit from burrs like these. Depending on your budget, you might want to search Amazon for Proxxon 28500 12-Volt Rotary Tool Micromot 60 (about £29 currently) Proxxon is a good make (I prefer it to the Dremel) and this small unit is ideal for carving, detailing, etc. Be warned - it's smaller than the standard Proxxon multi-tool, has no speed adjustment and needs a decent 12v supply.

Grinding welds and burs on stainless steel?

I have not used these on anything other than various types of wood. If I was working on stainless a deburring tool is a cheap solution or a flat file ( metal type), as for removing overweld I would use an abrasive disc that wears away. Given the hardness of stainless plus the heating taking place whilst welding ,plus the added properties in the rod or wire to make the weld in the first place you are going to need some serious speed and power to take it off. Sorry for the long answer but I have worked with metal for over fifty years and I learnt the hard way.

Will this work with my Dremel 3000?

Yes it works with my dremal 4000. All dremals take the same size bits.
