Our very own organic coconut sugar dark chocolate (67% cocoa solids). Our chocolate has a wonderful taste and aroma from the single origin cocoa liquor and butter from the superb Dominican Republic cocoa beans. We have this chocolate produced with our organic coconut sugar, organic cocoa liquor, organic cocoa butter, and absolutely nothing else. There is no egg, no gluten, no dairy or any other vegetable oils. Also suitable for vegans! For this chocolate, we used coconut sugar which is considered to have a much lower GI rating than cane sugar and also contains some extra useful nutrients. Coconut sugar, although a fraction less sweet than cane sugar, imparts a very subtle hint of caramel. It is perfect as that chocolate indulgence for primal or paleo style diets. Although these chocolate drops are great for simply savouring as they are, due to the high cocoa butter content this chocolate is actually a Couverture (high cocoa butter content chocolate). This results in a smoother, creamer and more refined experience compared to low cocoa butter content chocolate. The higher cocoa butter content also means that Couverture chocolate has a distinct glossy appearance, a crisp snap when broken, and the ability to be easily melted and tempered with ease. Another added benefit of a high cocoa butter content is there is no need to use any lecithin. We sell this chocolate simply sealed in pouches. Good quality chocolate seems to be getting offered in ever increasing prices. Please note we now offer this chocolate in small drops for easy weighing and baking.
