What is the shelf life after opened?

If the duck fat is kept in the refrigerator in a sealed container, its shelf life once the can is opened can be several weeks. It is up to you to judge as temperature in fridges can be different. Duck fat can also be kept much longer in the freezer.

What is the best way to store after using? How long will it last opened in the fridge?

My husband transfers the duck fat from the can to a mason jar. He also strains , reuses and adds the used duck fat to the mason jar. He uses it for everything so it doesn’t last too long. But we do keep it in the fridge until we get the next can and put that in the mason jar.

What is the Smoke point?

The smoke point of our duck fat (or our goose fat) is 190 degrees Celsius, ie 375 degrees Fahrenheit. As a comparison, butter's smoke point is 130 degrees Celsius (265 degrees Fahrenheit).
