EXCELLENT,PRECISE BLADE!
My husband, who is an avid sushi maker, made me purchase a Japanese knife, this Tojiro was ranked & reviewed the highest. We have both been blown away by its performance. The knife is incredibly sharp and precise, making it easy to slice through even the thinnest pieces of fish or vegetables. The blade is made of high-quality steel, and it feels very durable and well-made in our hands. The ergonomic handle is also a nice touch, as it's comfortable to grip and provides a secure hold on the knife while in use. What really sets this knife apart from others we've used in the past is its ability to maintain its sharpness over time. Great value for a well made **super sharp** chef's knife
I have a nice set of knives in a block, most are German and perform well. I had been watching this knife and picked it up when it went below $50. A steal in my opinion.It's the first Japanese knife I have owned. I have some expensive, nice and well made German knives. They are sharp, but the Tojiro 8.2" is on a whole other world of sharp. It cuts so well, it's like whatever I am cutting is moving out of the way of the blade, like Moses parting the Red Sea. Kidding aside, all the reviews that say how sharp this knife is - aren't wrong. I think I could perform surgery with it.Only one nitpick and that is the edge of the blade nearest the handle is squared off and if you aren't careful holding the knife, you can nick yourself easily. The only good news on that is the blade is so sharp, you won't feel it at first. I'm not a professional chef by any measure, but I know my way around the kitchen. I don't let certain people use this knife as they don't know how to properly hold a knife. That lack of knowledge and the sharp corner has resulted in 2 people getting little nicks. Don't let that dissuade you, as I find holding the knife correctly doesn't result in small cuts for me.The weight is nice as is the balance. It doesn't look like anything special. It's slightly lighter than similar knife and I find it comfortable to hold. I've used it for 8 months and so far, no need to sharpen it. I'm glad I bought it and it's a welcome addition to the kitchen.

A really good knife at a great price!
I am a simple home cook who takes pride the food I prepare. Because of this, my opinion shouldn't be held to the same caliber as some of those who are chefs.This knife is simply amazing. I managed to get it for under $60 (it seems prices change often on Amazon). At that price it is beyond amazing. This thing is so sharp out of the box that you need to be extremely careful. This knife can help you hone your knife skills and also slice your finger nail off with precision. This is a great knife for any home cook who wants a quality, simple, and reasonable priced chef's knife that is sharp and will stay sharp for a while. Can I find fault with it? Sure, but in this price range it would be difficult and I would consider myself to be unreasonable.Now, who isn't this knife for? If you aren't going to treat it with respect, then it isn't for you. If you put it in the dishwasher or let it bang around in the sink with other dirty dishes and utensils, it isn't for you (and you will end up in the emergency room getting stitches after blindly reaching into water with this knife - it is designed to cut and it will cut). If you aren't going to use the knife on a proper cutting surface, this knife isn't for you. While the knife is supposedly made from stainless, it does scratch & stain rather easily. Because of this, if you are looking for a showpiece, look elsewhere. If you don't fit in any of these categories and want a really good knife at a great price, this knife is for you.
