Nice Work Knife
The misono 440 is an amazing knife. I work in a medium volume hotel kitchen and this knife tears through prep. Does not come fully sharp (most japanese knives dont) but a few swipes on a 6k stone fix it right away. Edge retention was very good. Used it all day and still had factory sharpness. Very lightweight with larger handle and a nice rocking to it.

As good as $400-500 5 star chef knives
Excellent size, Japanese quality craftsmanship. This knife is primarily used by chefs in Japan so I had to get one. I have another $200 Japanese knife but an inch smaller, less all-purpose - but excellent for meat, veggies, fruit, sushi etc. I have a big chinese chef's knife that goes thru the lg bones(not my Japanese knives!). I have an expensive Henckels and a Wustof but never use them any more after getting these others.
