My Favorite Sour Manioc for Pao de Queijo!
Just like my headline says, it's my absolute favorite for Pao de Queijo! For my recipe, I use 1/2 sour manioc and 1/2 regular tapioca starch. I used to try making them without the sour manioc, but it honestly wasn't the same! It lacked the flavor that I associate with pao de queijo. I cannot find them locally, so Amazon to the rescue!Here is the recipe for Pao de Queijo that I use!Pao de Queijo (Brazilian cheese bread)Ingredients1 cup whole milk1/2 cup olive oil1/2 teaspoon salt5 ounces tapioca flour (about 1 cup)5 ounces of sour cassava flour (about 1 cup)2 large eggs8 ounces of grated cheese (I usually use a mix of parmesan, plus whatever else I happen to have on hand).- Combine milk and olive oil in a pot and bring to a gentle boil.- Place the flours into a stand mixer and pour the hot milk/oil mixture over it. Mix for about 5 minutes.- Add the eggs one at a time, mixing well after each egg- Add the cheese.- Mix for 10 minutes at a medium speed.The dough will be extremely soft and stretchy. What I normally do is spoon off blobs of it onto a plate and place it into the freezer, let it freeze for about 20 minutes, and then shape them into little balls. After I shape them, I let them freeze until they are solid, and then they are ready to eat whenever you want!To Bake:- Preheat to 350- Bake 30-40 minutes, until golden brownBTW, if anyone has any recommendations of other things I could use the sour manioc starch for, I would love to hear it! :)

Great brand!
This Brazilian brand is awesome! Sour starch is specially great for vegan recipes. Chef Jana uses it to make a variety of vegan cheeses and recipes. Delicious!
